When it comes to menu planning, I’m pretty diligent about setting aside 10-15 minutes each week to jot down a quick list of meals. Doing this every week saves so much time and money (and it saves my sanity!).
But there are times when, despite all of the planning, all of the preparation, dinner just doesn’t come together. Whether it happens because I lost track of time, had an unexpected task arise, or just forgot to take a roast out of the freezer. And when that happens, I have a fail proof back-up plan: a rotisserie chicken.
There are so many different meals that you can make with a rotisserie chicken. And these are a few of my family’s favorites…
Chicken Noodle Soup – This one is a no brainer for us. I always have homemade chicken stock and homemade egg noodles in the freezer, so whipping up a batch of soup is no problem. (If you don’t have stock or noodles on hand, don’t sweat it – just pick them up while you’re at the store buying the chicken).
Chicken Pot Pie – My family loves chicken pot pie – and with good reason. This super easy, super filling chicken pot pie recipe is so incredibly delicious. It takes less than 20 minutes to prepare, which means you can have dinner on the table in no time. Use a store bought pie crust, veggies from the frozen food section to make dinner even faster.
Chicken Salad with Grapes – While you’re at the store, pick up some red grapes, celery and pita bread so you can whip up this super tasty chicken salad sandwich. As an added bonus, this chicken salad tastes even better the next day – so you can have it for lunch, too!
Chicken Quesadillas – Chicken quesadillas are one of our ultimate go-to foods, especially on busy nights. Everybody in my family likes them, you can eat them on the go, and if you have enough pans (and enough burners!) you can make four of them at one time, which is a real time saver.
BBQ Chicken Sandwiches – My husband loves anything if it’s covered in barbecue sauce. Luckily, The Goose does, too. So whenever I’m running late, I’ll grab a rotisserie chicken from the deli, a package of hamburger buns and a bottle of barbecue sauce. Dinner can’t get much easier than that!
Chicken Salad – During the summer, when our family garden is in full bloom, we eat garden salad for dinner several times a week. (Let me clarify that: My husband and I eat salad, and The Goose eats a veggie plate). So, on days when I know I won’t have time to make a proper dinner, I grab a rotisserie chicken, a bag of salad mix, a cucumber and a tomato and voila! Dinner is ready.
Chicken Tacos – At our house, Tuesday night is known as Taco Tuesday. Sometimes we have taco cups, sometimes we have fajitas, and sometimes we have plain old tacos! Thankfully, tacos aren’t just a Tuesday night thing for us. And my family loves having tacos on a Friday night – we call it bonus Taco Tuesday!
