There is no doubt about it – chocolate mousse is delicious. But it takes so long to make, with the double boiler, the tempering of the eggs and the straining. Then you have to let it chill in the refrigerator for six hours! My family doesn’t have the patience for that. When they want chocolate mousse, they want it now! So I came up with a quick and easy way to make cheater’s chocolate mousse in just minutes. My family has never been happier.
Cheater’s Chocolate Mousse
One pint of heavy whipping cream
One box of instant chocolate pudding (the 4-serving size)
Pour the whipping cream into a large bowl, or the bowl for your stand mixer. Sprinkle the instant pudding mix on top of the cream. Turn your mixer on high, and mix for about 20 seconds. (I usually use the whisk attachment of my immersion blender – one of my must-have kitchen tools).The cream and pudding mixture should resemble chocolate whipped cream. (Keep a close eye on it and don’t over mix – you don’t want to end up with chocolate flavored butter!)
Divide the mousse into four individual serving dishes, cover and refrigerate for at least five minutes before serving. (The mousse can be stored for up to a day in the refrigerator, but it’s best eaten sooner as it tends to become a bit watery).
We serve this mousse plain, topped with chocolate chips, or topped with fresh whipped cream. No matter which way you serve it, it’s a guaranteed winner.
