I must admit, I don’t do a lot of crockpot cooking. (Mostly because I am usually home all day and the smell of dinner cooking from morning until night usually ensures that I will, in turn, be snacking from morning until night!).
Even though I don’t use the crockpot a lot, there have been plenty of days when the crockpot has really saved dinner – especially on those days when I am busy running errands all day, or when The Goose has after school activities which leave me very little time to get dinner on the table. On those days, I usually turn to one of my very favorite slow cooker recipes – Creamy Crockpot hicken and Stuffing.
Creamy Crockpot Chicken and Stuffing
1 box stuffing mix (or use my homemade stuffing recipe)
1 pound chicken breasts
1 can chicken broth
2 cans cream of chicken soup
Place the chicken in the bottom of the slow cooker, and pour one cup of chicken broth over the top and one can of the cream of chicken soup over the top.
Mix the stuffing with the remaining chicken broth and one can of the chicken soup. Spoon over the chicken.
Cook the chicken on low for 8 hours or on high for 4 hours.
