The Goose was home sick most of last week. He came home from school after lunch on Wednesday and was home the rest of the week due to a persistent fever and an ear infection. Thankfully, he was feeling better come Saturday morning and he was antsy to do some baking. He was in the mood to make some cookies. And I had just the recipe – Homemade Gingerbread Man.
Homemade Gingerbread Man
1 stick butter
1 cup brown sugar
1/2 cup honey
3 cups flour
1 teaspoon baking soda
2 teaspoons ground ginger
In a small saucepan combine the butter, brown sugar and honey. Cook over low heat until the butter has melted and the sugar has dissolved. Remove from the heat and let cool slightly.
In a large mixing bowl combine the flour, baking soda and ground ginger. Stir well to ensure the ingredients are thoroughly mixed together.
Beat the egg in a small bowl. Temper the egg by adding 5 or 6 small spoonfuls of the cooled butter mixture, one at a time, and stirring until they are mixed well.
Add the tempered egg mixture and the remaining butter mixture to the flour and stir with a heavy wooden spoon until the dough comes together.
Wrap the dough in plastic wrap and refrigerate for a half hour.
Preheat the oven to 375 degrees.
Remove the gingerbread dough from the refrigerator and roll to about 1/4 inch thickness.
Use cookie cutters to cut the dough into the desired shapes and place each cookie on a baking sheet lined with parchment paper, leaving two inches between each cookie.
Bake the cookies for 10-12 minutes (a bit longer if your cookies are large).
After they have finished baking, use a spatula to move the cookies onto a cooling rack.
