Last night, The Goose got off the school bus and told me wasn’t feeling good. Again. When we got home I took his temperature, and he had a fever. Again. This time, though, he was coughing, sneezing and had a stuffy nose. So, for the second time in a week, The Goose is home sick.
Whenever The Goose isn’t feeling good, he always wants pancakes. Today was no exception. Luckily, I keep a canister of homemade pancake mix in the cupboard. I was able to whip up a batch of homemade pancakes in just a few minutes, and The Goose couldn’t have been happier. For him, pancakes for breakfast and a day cuddling on the couch with mom is pure perfection.
Homemade Pancake Mix
8 cups all-purpose flour
1/2 cup brown sugar
1/2 cup baking powder
1/2 teaspoon salt
Mix all ingredients together and store in an airtight container in your cupboard.
To cook (makes a dozen small pancakes)
In a small bowl, combine the following ingredients:
1 cup homemade pancake mix
1 large egg
1 cup milk
3 tablespoons sour cream
1 tablespoon butter, melted and cooled slightly
1 teaspoon vanilla extract
Whisk the dry and wet ingredients together until just combined. (The batter may be a bit lumpy – that’s okay. If you overmix them, they are going to end up flat as a, um, pancake!).
Preheat your griddle (or frying pan). Use a ladle to slowly scoop the pancake batter onto the griddle. (Be sure not to go too fast – the secret to round pancakes is to take your time pouring the batter).
Cook the pancakes until tiny bubbles begin to form on the surface. Carefully flip them over, and cook for another minute or so, until they are golden brown.
Serve the pancakes topped with butter and your favorite syrup.
Once cooked, the pancakes keep for up to five days in the refrigerator. You can also freeze them for a quick and easy breakfast on school days. To freeze them, I usually lay them in a single layer on a large cookie sheet. I stick the cookie sheet in the freezer for two hours, then put the individually frozen pancakes in a gallon size freezer bag. When we are ready to eat them, I take the desired amount from the freezer and microwave them for 45 seconds.
