Yesterday was St. Patrick’s Day – one of The Goose’s favorite holidays. He wore a green shirt, green underpants and even green socks. We drew rainbows on everything from his snack bag to his homework, and he even drank green milk with dinner. But, even though we did all of these things to celebrate the holiday, The Goose was highly offended that I forgot the one thing that makes St. Patrick’s Day perfect. I forgot to buy Lucky Charms.
I admit it, I ruined breakfast. But… I did make up for it in a big way. When The Goose came home from school, we made Lucky Charms Treats. Lucky Charms covered in butter and marshmallows? I’ll take it!
Lucky Charms Treats
1/4 cup butter
4 cups marshmallows
6 cups Lucky Charms cereal
Spray a 9×13 glass casserole dish with cooking spray.
In a large saucepan melt butter over low heat. Add marshmallows and stir constantly until they are completely melted. Remove from heat.
Add Lucky Charms. Stir until well coated.
Pour the cereal mixture into the casserole dish and firmly press down using a piece of wax paper (I spray it with cooking spray to prevent sticking). Let cool completely before cutting (if you can).
