Because nobody else in my house likes potatoes, we don’t have them very often. This is one of the reasons why I love Thanksgiving so much. It’s the one day of the year that I can have all the mashed potatoes I want.
CREAMY MASHED POTATOES
5 pounds potatoes, peeled and cut into 2-inch chunks (i use a combination of russet potatoes and white potatoes, but you can use whatever you have on hand)
2 1/2 Tbsp plus 1 tsp kosher salt
12 Tbsp room temperature butter, cut into pieces
1/2 to 3/4 cup heavy cream
1 cup sour cream
1/4 tsp ground nutmeg
3/4 tsp black pepper
Place potatoes and 2 ½ TBSP salt in large pot. Cover with cold water. Bring to a boil. Reduce heat and simmer until tender, 20 to 25 minutes.
Once the potatoes are fully cooked, drain them and return them to the hot pot. Add the cream, butter, sour cream, nutmeg, pepper, and the remaining salt.
Using a potato masher, mash the potatoes until all of the lumps are gone. If you find that your potatoes are a little too think, gradually add more cream until they reach your desired consistency.
These potatoes are delicious on their own, but should definitely be served with turkey gravy. After all, Thanksgiving only happens once a year!
