I have a lot of close friends and family who are on gluten-free diets. This means that I am always on the look out for yummy, gluten free snacks that are inexpensive, easy to make and, most importantly, taste great.
Like a lot of people I assumed that gluten was only found in bread products – but I was surprised to learn that trace amounts of gluten can be found in everything from pickles to coffee. Because gluten is found in SO MANY food items these days, I am always reading labels to make sure that I am not serving any gluten containing foods to the wrong people. And when I was in the cereal aisle last week I was truly excited to see that Chex are gluten free – because this meant that I could count on my favorite recipe for Muddy Buddies whenever we need a snack for our gluten free friends.
4 cups Rice Chex cereal (if you will be serving these to gluten-free people, check the label to make sure you are buying the right one)
1/2 cup chocolate chips
1/4 cup peanut butter
2 tablespoons butter
1/2 teaspoon vanilla
Measure out the cereal, and add pour it into a medium sized mixing bowl.
In a microwave safe bowl, combine the butter, chocolate chips and peanut butter. Microwave for 45 seconds, then stir until melted and smooth.
Pour the chocolate and peanut butter mixture over the cereal and stir until it is evenly coated.
Place the chocolate covered cereal in a gallon size Ziploc storage bag and add the powdered sugar.
Tightly close the bag and shake the bag until well coated. Spread the cereal out on a sheet of waxed paper and allow to cool for at least 15 minutes.
Store in airtight container. Or just eat them all right away, then you don’t need to worry about storing them.
