Yesterday was Thanksgiving and we had an enormous turkey dinner. We had a 14 pound turkey, even though there were only six of us. Needless to say, we have a lot of leftover turkey. And while I do love a good turkey sandwich, come Friday afternoon I am usually tired of turkey.
If you’re like me, and you’ve had your fill of turkey leftovers, you need to check out this list of recipes. You’ll never look at leftover turkey the same way again.
Turkey Fried Rice (In My Red Kitchen) – A unique twist on traditional chicken fried rice, this recipe calls for chopped leftover turkey, cold rice and any vegetables you can scrounge up.
Turkey Pot Pie (DamnDelicious.net) – Turkey pot pie has always been my go-to recipe when I’ve had leftover turkey to use. Plus – you can make the filling ahead of time, freeze it and have turkey pot pie all year round.
Turkey Tetrazzini (Taste of Home) – With pasta, cream of mushroom soup and loads of cheese, even the kids will eat this one up without a fight.
Thanksgiving Leftover Grilled Cheese (Ring Finger Tan Line) – This sandwich – which combines the spiciness of pepper jack cheese, the mildness of provolone and the tangy flavor of homemade cranberries – is a grilled cheese lovers dream.
Turkey Noodle Casserole (Creole Contessa) – Again, the pasta/cream of mushroom soup/cheese combination is always a winner!
Turkey Cranberry Quesadillas (A Night Owl Blog) – We are big fans of the quesadilla, and a quesadilla with turkey, cranberries AND cheese? Yum!
30-Minute Leftover Turkey Chili (Just a Taste) – If you like chili, this recipe is a guaranteed crowd pleaser. As an added bonus – the kids won’t even realize you’re feeding them leftover turkey for the third (or fourth) time!
Turkey Shepherd’s Pie (Gnowfglins) – This is my favorite of all the turkey leftover recipes, because it doesn’t just use the leftover turkey, it uses the leftover everything! If you have some corn, toss it in. If you have some green beans, toss them in, too!
Turkey and Wild Rice Casserole (Lemons for Lulu) – I love this recipe because even though it is a wild rice casserole the celery, onions and cream of mushroom soup give it a stuffing-like quality. And then there’s the cheese. You definitely can’t go wrong with that.
Asian Turkey Lettuce Wraps (DamnDelicious.net) – I LOVE the chicken lettuce wraps at PF Changs. And while these are different in so many ways… they are still really, really good. And they are an unexpected way to use up those turkey leftovers.
