I’m the only person in my house who really loves potatoes. My husband can take them or leave them, The Goose won’t eat them unless they are covered in sour cream and bacon and I spend a lot of time thinking of different recipes to help convince them that potatoes are delicious.
They’ve both grown to like twice baked mashed potatoes, fried potatoes, mashed potatoes, and loaded potato bites. And now they like scalloped potatoes, too. And I can add one more potato recipe to my rotation.
4 cups potatoes, peeled and thinly sliced
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 1/2 cups cheddar cheese, divided
Preheat your oven to 350 degrees.
Begin by melting the butter in a medium-sized saucepan. Add the flour and whisk together. Cook for one minute. Add the milk and the salt to the butter and flour mixture. Continue cooking, stirring constantly, until smooth. Add 1 cup of cheese and stir until melted.
Spray a 9 X 13 baking dish with non-stick cooking spray. Layer one half of the potatoes in the dish and cover with half of the cheese sauce. Add the rest of the potatoes, cover them with the remaining cheese sauce and then top with the cheese.
Bake the scalloped potatoes for about an hour, or until the potatoes are fully cooked and the top layer of cheese is nicely browned.
