I’m always on the look-out for slow cooker recipes that I can throw together in a hurry, without doing a lot of chopping, measuring, or digging through the cupboard searching for rarely used spices. Since both my husband and The Goose love pork chops, and cooking them in the oven never works out for me, I thought I’d try cooking them in the crock pot – and boy was that a great idea!
Typically, whenever I make pork – whether it’s been marinated, breaded or cooked plain, my husband always covers it in barbecue sauce. This drives me INSANE, especially when I’ve put a lot of time into making a meal. So, the thing I like most about this recipe, other than the simplicity, is that covering it in barbecue sauce would ruin it.
Slow Cooker Ranch Pork Chops
6-8 Thick cut pork chops
2 Cans `Cream of chicken soup
1/2 Cup Milk
1 Packet ranch dressing mix
Layer the pork chops in the bottom of your crock pot and season lightly with salt and pepper.
In a small bowl, combine the cream of chicken soup, milk and ranch dressing mix. Stir until mixed well.
Pour the soup and ranch dressing mixture over the pork, covering as much of the pork as you can.
Cook on low for 6 hours, or on high for 4 hours.
I typically serve these with mashed potatoes – the soup and ranch mixture makes a delicious gravy. (I will sometimes add a bit more milk just before serving, depending on how thick the soup is).
