Each year my husband gives up eating meat for lent. and each year I turn to my tried and true vegetarian recipes, like Spicy Black Bean Burritos, Macaroni and Cheese and Crispy Tofu with Spicy Peanut Sauce.
This year, when I started looking for the Crispy Tofu With Spicy Peanut Sauce recipe – a recipe that originally came from my niece, it was gone. And, since my niece is out of the country fulfilling her lifelong dream, I had to wing it. It’s not exactly like her recipe, but I must say, it turned out pretty good.
Crispy Tofu With Spicy Peanut Sauce
1 box extra firm tofu
2 Tablespoons vegetable oil
Spicy Peanut Sauce
1-2 Tablespoons vegetable oil
1 garlic clove, minced
3/4 teaspoon dried ginger
1/2 cup water
1/4 cup peanut butter
2 Tablespoons soy sauce
1 1/2 Tablespoons brown sugar
1 Tablespoon chili sauce
1/2 Teaspoon Red Pepper Flakes
Begin by slicing the tofu into 1-inch chunks. Place each chunk in the cornstarch, tossing to coat.
In a medium sized skillet, heat the vegetable oil over medium heat. Add the tofu chunks to the skillet, and cook, turning them every few minutes, until they are golden brown.
While the tofu is cooking begin making the spicy peanut sauce. In a small sauce pan, add the vegetable oil and heat over medium heat. Add the scallion, and cook for about a minute, until it is fragrant. Add the remaining ingredients. Bring to a boil, and then simmer over low heat for about 5 minutes.
Crispy Tofu With Spicy Peanut Sauce is delicious served on it’s own or served over rice. The sauce is also great as a dipping sauce, or served with chicken (for those of us who aren’t big fans of tofu). This recipe makes about one cup of spicy peanut sauce, but can easily be doubled.
